Nut Butter Chocolate Cup (GF, DF, LF)

This easy to make treat is my all time favorite!  Make sure to pick a nut butter with no sugar added.  I like to use a blanched almond butter as the skin on the almond can cause some people issues.   


Ingredients:

  • 1/2 C Coconut Oil
  •  2 T Honey
  • 1/4 C Unsweetened cocoa powder (alki free) 
  • a jar of Blanched Almond Butter

Instructions:

  1. Gently melt coconut oil in a saucepan over low heat.  Or melt in the microwave lower power and checking frequently, do not want to over heat.
  2. Melt honey in the oil 
  3. Whisk in cocoa powder.  When start to see a gloss remove from the heat and whisk until smooth and glossy. 
  4. Pour mixture into a ice cube tray, candy mold, or pliable tray. 
  5. Refrigerate for 1 hour or store in the freezer.
  6. Enjoy!


Notes:  Add coco nibs, orange zest, dried coconut, chopped nuts, cinnamon, cayenne pepper..  After above directions.
